CHICKEN PARMESAN 
4-6 chicken breast halves (skinned and boned)
2 (14 1/2 oz.) cans Del Monte Italian
2 tbsp. cornstarch
1/2 tsp. oregano or basil (crushed)
1/4 tsp. hot pepper sauce (optional)
1/4 c. grated Parmesan cheese

Place chicken in baking dish (9x13). Bake covered for 25 minutes at 425 degrees (preheated oven, want it to cook fast). Remove cover and drain juices from chicken. Combine tomatoes, cornstarch, oregano and pepper sauce. Cook, stirring constantly until sauce is thickened. Pour sauce over chicken. Top with Parmesan cheese and bake 5 minutes UNCOVERED.
