ZUCCHINI CHEESE PUDDING 
1 1/2 c. grated zucchini
2 slices enriched white bread, made into crumbs, divided
3/4 c. grated carrot
2 oz. grated Cheddar or any cheese
2 med. eggs, beaten
1 oz. onion, chopped
1/4 tsp. salt
1/8 tsp. pepper
2 tbsp. imitation butter

Bake at 350 degrees. In medium bowl combine zucchini and 1/2 bread crumbs, remaining ingredients except butter. Transfer mixture to 1 quart casserole. Combine remaining bread crumbs. Melt butter until crumbs are coated. Spread crumbs over top of pudding. Bake 1 hour at 350 degrees.
