VEGETABLE CASSEROLE 
2 lg. pkgs. frozen mixed vegetables (broccoli, cauliflower, & carrots)
1 lb. Velveeta cheese, cubed
1 tube Ritz crackers
1/2 c. butter

Cook vegetables according to package directions. Melt butter and stir in crackers. Grease a 3 quart casserole and put vegetables in and top with Velveeta cheese. Then top with the cracker mixture. Bake at 350 degrees for 20 minutes.
