NUTTY COCONUT TRIANGLES 
1/2 c. butter, softened
All-purpose flour
Light brown sugar
2 eggs
1 tsp. vanilla extract
1/2 tsp. baking powder
1/4 tsp. salt
1 (3 1/2 oz.) can flaked coconut
1 c. chopped pecans

1. In small bowl beat butter, 1 cup flour and 1/2 cup packed light brown sugar until well blended.

2. Pat dough into 13 x 9 inch baking dish. Bake 15 minutes.

3. In large bowl measure eggs, vanilla, baking powder, salt, 3/4 cup packed light brown sugar and 3 tablespoons flour. Beat until well blended. Stir in coconut and pecans.

4. Spread coconut mixture over baked layer in pan. Bake 20-25 minutes longer or until golden.

5. Cool in pan or wire rack. Cut into 24 triangle cookies.

Thank you for posting this recipe. I have made them for years and my magazine with the recipe has been thrown out! Men love these. They are firm but gooey. Most people have no idea there is coconut in them. A Christmas must.
