WHITE SAUCES 
THIN:

1 tbsp. butter, fat or butter
1 tbsp. flour
1/2 tsp. salt
1 c. evaporated milk

MEDIUM:

2 tbsp. butter, fat or butter
2 tbsp. flour
1/2 tsp. salt
1 c. evaporated milk

THICK:

4 tbsp. butter, fat or butter
4 tbsp. flour
1/2 tsp. salt
1 c. evaporated milk

Melt butter in double boiler or over low flame. Stir in flour and salt, blending until smooth. Add milk gradually, stirring constantly. Cook until smooth and thickened.

VARIATIONS:

Cheese Sauce: To basic medium sauce, add 1/2 cup grated cheese and 1/2 teaspoon Worcestershire sauce.

Celery Sauce: To basic medium sauce, add 1/2 cup chopped celery.

Egg Sauce: To basic medium sauce, add 1 hard boiled egg, chopped.

Mushroom Sauce: To basic medium sauce, add 1/2 to 1/3 cup chopped or sliced cooked mushrooms.
