ZUCCHINI BREAD 
3 eggs
1 c. Crisco oil
2 c. sugar
2 c. peeled, grated zucchini
3 tsp. vanilla
3 c. flour
1 tsp. salt
2 1/2 tsp. cinnamon
1 tsp. baking soda
3/4 c. chopped nuts (optional)
1/4 tsp. baking powder

Cream eggs and oil together. Add remaining ingredients and mix well. Bake at 350 degrees for 1 hour in greased loaf pan.
