BAKED POTATO CASSEROLE 
2 lb. bag hash brown potatoes
1/2 c. butter
1 c. sour cream
1 c. milk
1 1/2 c. shredded Velveeta
1 tsp. salt
1/4 tsp. pepper
1 c. chopped onion

Place potatoes in a 9 x 13 inch baking pan. Combine remaining ingredients in a 2 quart saucepan and cook until cheese is melted. Pour mixture over potatoes and bake at 350 degrees for 1 hour.
