ASPARAGUS VINAIGRETTE | |
1 1/2 lbs. fresh or frozen asparagus 3 tbsp. olive oil 4 tbsp. parsley, chopped 1 tsp. salt 1/8 tsp. pepper Cook and chill asparagus. Beat oil, parsley, salt and pepper with a rotary beater until well blended. Pour over asparagus. Serves 6. |
