ITALY: PIZZA NAPOLETANA 
1 tbsp. yeast
1 c. flour
Pinch salt
3 med. tomatoes, chopped
1 c. Mozzarella cheese, grated
3 anchovies
1/2 tsp. oregano
1/2 tsp. salt
1 tbsp. olive oil

Make dough by dissolving yeast in a cup of lukewarm water. Add 1/4 cup flour and let rise. Place remaining flour and salt in bowl, stir in yeast mixture a little at a time. Knead dough 5 minutes, then let rise 2 to 2 1/2 hours. When dough doubles, roll into round shape and place on greased baking tray. Arrange tomatoes, cheese and anchovies on top. Sprinkle with oregano, salt and olive oil. Bake in preheated 475 degree oven for 15 minutes.
