STRAWBERRY-RHUBARB CRISP 
1 pt. strawberries, sliced
4 sm. sticks rhubarb, sliced
1/3 c. honey or more to taste
1 tsp. fresh grated ginger or ground
1 tsp. ground cinnamon
Grated orange rind from 1 orange
1 c. granola
2 tbsp. butter

Mix together the first 6 ingredients and microwave for 5-6 minutes on High until softened; set aside.

Slice butter over granola and microwave 2 minutes or until butter is melted. Stir granola until coats all of granola with butter. Top the strawberries and rhubarb with granola and return to microwave and heat for another 2-3 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
