ITALIAN ZUCCHINI CASSEROLE 
8 c. zucchini slices
1/2 c. diced green pepper
1/2 c. diced onions
1 (3 oz.) can sliced mushrooms, drained
1 (6 oz.) can tomato paste
4 tbsp. grated Parmesan cheese
4 tbsp. butter
1 pkg. spaghetti sauce mix
1 c. water
1 (4 oz.) pkg. shredded Mozzarella cheese

In large saucepan, cook zucchini 45 minutes. Drain well. Set aside. Saute onions and peppers in butter on low heat until tender, but not brown. Remove from heat. Mix together water, dry sauce mix, tomato paste, and mushrooms. Mix well. Gently stir in zucchini and Mozzarella cheese. Turn out in baking dish. Sprinkle with Parmesan cheese. Bake in 350 degree oven for 35 to 45 minutes or until cheese on top is bubbly and melted.
