WISCONSIN ZUCCHINI CASSEROLE 
3 med. zucchini, sliced in 1/4" rounds
2 tbsp. olive oil
1 lb. lean ground beef
1 med. onion, chopped
1/2 c. diced celery
1 can (8 oz.) tomato sauce
1 c. sliced mushrooms
1/4 c. red wine
1/2 tsp. salt
1/2 tsp. basil or oregano
1/4 tsp. pepper
8 oz. mozzarella cheese, shredded

Spread zucchini evenly in 13 x 9 inch baking pan; set aside. In large skillet, brown beef, in oil. Add onion and celery. Stir in tomato sauce, mushrooms, wine and seasonings. Spoon evenly over zucchini. Sprinkle with cheese. Bake covered in 350 degree oven for 20 minutes, uncover and bake 20 minutes more until cheese is lightly browned. (6 servings).
