LEMON CHICKEN 
2 1/2 lbs. chicken, cut in serving pieces
2 tsp. finely minced garlic
1 tbsp. vegetable oil
1 tbsp. finely grated lemon rind
3 tbsp. lemon juice
3 tbsp. chicken broth (or water)
1 tsp. crumbled oregano
1/2 tsp. dried thyme

Preheat oven to 400 degrees. Rub chicken pieces with garlic; in baking dish, large enough to hold chicken pieces in one layer, rub oil on bottom and sides. Put chicken pieces in, skin side down. Sprinkle with lemon rind; pour lemon juice and broth over all. Sprinkle with oregano and thyme. Bake for 30 minutes. Turn and continue baking another 30 minutes.
