BAKED EGGPLANT 
1 sm. eggplant (cooked until tender)
1/2 c. milk
3 stalks celery
1 sm. bell pepper (chopped coarsely)
1 med. onion (chopped)
2 eggs, beaten
Salt, pepper & sage to taste
1 1/2 c. bread crumbs

Melt 1/2 stick of butter. Mix together and bake 2 hours at 350 degrees. Taste like dressing.
