BURRITO CASSEROLE 
1 (16 oz.) refried beans
8 flour tortillas
1/2 c. chopped onions (opt.)
1 lb. ground beef
1 pkg. dry enchilada sauce mix
1 (8 oz.) can tomato sauce
1 1/2 c. water
Shredded Mozzarella and cheddar cheese

Place 3 tablespoons refried beans in a strip across each tortilla, sprinkle with onions if desired, roll tortillas, and place seam side down in a greased 13 x 8 inch pan. Brown ground beef, drain and add sauce mix, tomato sauce and water. Simmer for 10 minutes, then pour sauce over tortillas. Sprinkle shredded cheese on top and bake for 20 minutes in a 350 degree oven. Serves 8.
