ARROZ CON POLLO 
9 to 10 pieces chicken
2 c. white rice, regular
2 c. water and 2 c. chicken broth
1/2 red bell pepper, chopped
2 tsp. chili powder plus extra for chicken
1 tbsp. ground cumin, plus extra for chicken
1 clove garlic, crushed and minced
1/2 tsp. salt (optional)
1/2 onion, chopped

Wash chicken, pat dry and rub with chili powder and cumin, set aside. Mix all other ingredients and put in 9 x 13 inch baking pan and put chicken on top. Bake, covered, for 1 hour. Serves 6.
