SPICY POPPY SEED COOKIES 
1 c. soft butter
1/2 c. sugar
1/2 c. packed brown sugar
2 eggs
1 tsp. vanilla
2 3/4 c. flour
1/2 tsp. salt
2 tsp. cinnamon
1 tsp. ginger
1/2 c. poppy seed
1/2 tsp. baking soda

Cream butter and sugars until light. Add eggs, one at a time, beating well. Stir in vanilla. Add flour, soda, salt, and spices and mix well. Stir in seed. (Dough will be stiff). Mold into long, smooth rolls about 2 inch diameter. Wrap in foil and chill overnight. Cut in thin slices. Bake at 375 degrees, 10- 12 minutes (ungreased cookie sheet).
