EASY CHICKEN CASSEROLE 
8 single chicken breasts
2 pkg. (16 oz. each) frozen broccoli
2 cans cream of chicken soup
1/2 c. mayonnaise (Kraft Miracle Whip can be used)
1/3 c. evaporated milk
1 tsp. lemon juice
1/2 tsp. curry powder
1 c. grated sharp Cheddar cheese
Bread crumbs and melted butter

Cook chicken in large pot of water. Can use microwave if you prefer. Cool. Remove chicken from bone. Cut into bite size pieces or cubes. Layer in 9 x 13 inch pan which has been sprayed with cooking spray. Cook broccoli until tender. Drain and layer over chicken.

Combine chicken soup, mayonnaise, milk and lemon juice, curry powder, blending until smooth sauce. Pour over broccoli. Sprinkle cheese over sauce. Toss bread crumbs with melted butter. Put on top of cheese. Bake at 350 degrees for 30 minutes. Serve 12. Can be cut in half to serve 6. Use 8 x 8 inch pan. Serve with salad and dinner rolls. Makes a nice meal.

Since microwave ovens vary in power, you may need to adjust your cooking time.
