GRATED SWEET POTATO PUDDING 
4 c. grated raw sweet potatoes
1/2 c. sugar
1/2 c. light corn syrup
1 1/2 c. milk
1/3 c. melted butter
3 eggs, beaten
1 tsp. ground nutmeg
1 tsp. ground cinnamon
1/2 tsp. salt

Combine all ingredients, mixing well. Spoon mixture into a lightly greased 2 quart casserole. Bake at 325 degrees for 1 1/2 hours or until slightly firm. Yields 6-8 servings.
