DEEP SOUTH BARBECUE SAUCE | |
1 clove garlic, minced 1/4 c. chopped onion 1/4 c. catsup 1 (10 3/4 oz.) can tomato soup 1 (8 oz.) can tomato sauce 2 tbsp. Worcestershire sauce 1/4 c. cider vinegar 1 tsp. brown sugar 2 tsp. butter 1/4 tsp. black pepper 1/2 tsp. Tabasco sauce 1 1/2 tsp. liquid smoke 1 tsp. cayenne pepper 1/2 tsp. salt In large saucepan, mix garlic and onion. Pour in catsup, tomato soup and tomato sauce and blend. Add Worcestershire sauce, vinegar, brown sugar and butter. Heat at very low temperature. When mixture has a nice consistency, add black pepper, Tabasco, liquid smoke, cayenne pepper and salt. While stirring occasionally, bring to medium high heat and let it reach a low boil. Place sauce on simmer and keep warm until ready for meat, ribs or beans. Make sauce enough for 10 pounds of ribs or 2 pounds of beef, ham or pork. It's spicy so you may desire to cut down on these ingredients. |
