WILD RICE CASSEROLE 
8 oz. cooked wild rice

4 ounces uncooked in 3 cups water, simmer 45 minutes, drain excess water.

Saute:

1/4 c. melted butter
1/2 c. chopped onions
1 tsp. salt & pepper

Saute, then add 1/3 cup flour to form roux. Add to above mixture. Simmer 2- 3minutes.

1 c. mocha mix (or any non-dairy creamer)
1 c. chicken broth

Add:

4 c. diced turkey
4 tbsp. almonds
1 sm. jar pimento
1/4 c. chopped parsley

Mix all together in casserole. Bake covered 40 minutes at 400 degrees. Yield: 6 servings.
