CAROB CHIP COOKIES 
1/2 c. oil
1/2 c. honey
2 eggs
2 1/3 c. whole wheat flour
2 tsp. baking powder
1 c. walnuts
1 tsp. vanilla
1 c. unsweetened carob chips

Mix oil and honey. Add eggs and mix well. Stir in flour, baking powder, nuts, vanilla, and carob chips. Mix well. Drop by teaspoons onto a greased baking sheet. Bake at 350 degrees for 10 minutes. Eat and give to your neighbors.

I substituted raisins for the nuts. The amount of carob chips is too high for the recipe. The raisins helped add some moisture. I can't imagine with walnuts...I also cooked them for 8 minutes only. I would recommend a little more sweetening. I used Kamut whole wheat flour and 2 tsp vanilla to try and help the flavor...but it comes down to really needing a little more sweetness.

For the 1/2 cup of oil I used olive oil; I used Pamela's Pancake mix (gluten free) instead of the whole wheat flour... Perfect tea cookie; not sweet... May add a little coconut sugar next time for extra sweetness.
