CARAMEL PIE 
4 eggs, separated
1 c. sugar
3 tbsp. cornstarch
1 1/2 c. milk
2 tbsp. butter
1 tsp. vanilla
Dash of salt

Brown 2/3 cup of sugar, add 1 cup boiling water and cook until it will be about 1/2 cup syrup.

Mix egg yolks, 1/3 cup of the sugar, cornstarch, milk and butter. Then add the caramel syrup and cook until desired consistency. Add vanilla. Pour into a 9 inch pie crust.

Beat egg whites with 1/3 teaspoon cream of tartar and dash of salt until frothy, start adding 1/2 cup of sugar about 2 tablespoons at a time, beat well after each addition. Continue beating until all the sugar has been added and egg whites are stiff. Add 1/3 teaspoon vanilla. Put on top of pie and bake until meringue is brown.
