VIRTUALLY PERFECT VEAL AND PEPPERS | |
2 lb. veal, trimmed and cubed 2 tbsp. olive oil 3 lg. green peppers, cut up Salt and pepper 1/2 tsp. garlic salt Tomato sauce 1 lb. linguine or favorite pasta Grated Romano or Parmesan cheese (optional) TOMATO SAUCE: 1 tbsp. olive oil 2 (16 oz.) cans crushed Italian tomatoes 1 tsp. garlic salt 1 tsp. basil 1 tsp. oregano Saute' veal cubes in olive oil until nicely browned. In a separate pan, fry green peppers until partially done, then add to veal. Season with salt and pepper to taste and garlic salt. In large skillet combine all tomato sauce ingredients; simmer for 2 hours. Add 2 cups tomato sauce to the veal and peppers and simmer until tender, about 1 hour. Cook pasta according to package directions. Add 1 cup tomato sauce and mix. Place pasta on a serving dish and top with veal and peppers. Serve with grated Romano or Parmesan cheese on the side, if desired. This is Grandma's family recipe that we have been enjoying for many years. |
