VIRTUALLY PERFECT VEAL AND
PEPPERS
 
2 lb. veal, trimmed and cubed
2 tbsp. olive oil
3 lg. green peppers, cut up
Salt and pepper
1/2 tsp. garlic salt
Tomato sauce
1 lb. linguine or favorite pasta
Grated Romano or Parmesan cheese (optional)

TOMATO SAUCE:

1 tbsp. olive oil
2 (16 oz.) cans crushed Italian tomatoes
1 tsp. garlic salt
1 tsp. basil
1 tsp. oregano

Saute' veal cubes in olive oil until nicely browned. In a separate pan, fry green peppers until partially done, then add to veal. Season with salt and pepper to taste and garlic salt. In large skillet combine all tomato sauce ingredients; simmer for 2 hours. Add 2 cups tomato sauce to the veal and peppers and simmer until tender, about 1 hour. Cook pasta according to package directions. Add 1 cup tomato sauce and mix. Place pasta on a serving dish and top with veal and peppers. Serve with grated Romano or Parmesan cheese on the side, if desired.
