SNOWFLAKES 
2 unbeaten egg whites
1/4 tsp. salt
1/3 c. granulated sugar
3/4 tsp. almond extract
1/2 c. flaked coconut

Preheat the oven to 250 degrees. With mixer, or hand beater, beat egg whites and salt until soft peaks are formed. Add sugar, a teaspoon at a time, beating until mixture is very stiff. Add extract and coconut. Drop by teaspoon onto a well-greased cookie sheet. Bake for 45 minutes.

Turn off oven and leave cookies in until they are cool and crisp. Remove from oven and store in an airtight container until served. Low calorie; only 25 each.
