SPICED APPLE WALNUT BREAD 
1 c. all-purpose flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1 c. chopped walnuts
1 1/2 c. pared, shredded tart baking apples
1/3 c. shortening or butter
2/3 c. granulated sugar
2 lg. eggs
1 c. whole wheat flour

Sift together flour, baking powder, salt, baking soda, and spices. Prepare apples; set aside. Cream together shortening, sugar, and eggs. Stir in half the flour mixture until moistened; mix in apples. Gradually blend in remaining flour mixture and whole wheat flour. Set aside 1/4 cup walnuts for top of loaf. Blend remaining walnuts into batter; turn into greased 8 1/2 x 4 1/2 inch loaf pan. Spread level. Sprinkle with remaining walnuts. Bake below oven center at 350 degrees about 1 hour or until pick inserted in center comes out clean.

Remove from oven; let stand in pan 10 minutes, then turn onto wire rack to cool. Makes 1 loaf.

If apples are excessively juicy when shredded, drain them lightly before adding to batter.
