APPLE WALNUT BREAD 
2 eggs
1 c. granulated sugar
1 c. oil
1/2 c. brown sugar
1 tsp. vanilla
2 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. walnuts
2 Granny Smith apples, or lg. tart, unpeeled and diced

Stir by hand; do not use mixer. Mix eggs, oil, granulated and brown sugars and vanilla. Sift together and add flour, salt, baking soda, and cinnamon. Stir in walnuts and apples. Place in a greased bundt pan or 9 x 13 inch pan. Bake 1 hour at 350 degrees.

A very easy to prepare bread cake, was moist and delicious. Best served with some fresh whipped cream or good vanilla ice cream. I also topped with a little powered sugar for a nicer presentation.

This is a sweet, dark, delicious apple nut bread that is very cake-like yet moist. Wonderful aroma as it bakes too. I baked it in a Bundt pan and had trouble getting it out, although I sprayed the pan. My husband loved it and it will definitely be a regular fall recipe for us. I cut it in slices and froze them so we wouldn't eat it all at once, but we ended up getting them out of the freezer anyway and eating it all in two days! Superb served with ice cream.
