NOODLES NAPOLI 
1 med. onion, chopped
1 clove garlic, minced
2 tbsp. olive oil
1/2 lb. ground beef
1/2 lb. ground pork
1 (4 oz.) can mushrooms
1 (8 oz.) can tomato sauce
1 sm. can tomato paste
1 tsp. oregano
2 eggs
2 tsp. salt
1 (8 oz.) pkg. wide egg noodles, cooked and drained
1 pkg. frozen chopped spinach, thawed and drained
1 c. cottage cheese
1/3 c. grated Parmesan cheese
Sliced American cheese

Brown onion and garlic in 1 tablespoon oil; add beef and pork and cook until browned. Stir in mushrooms and liquid, tomato sauce and paste, salt, and oregano. Simmer for 15 minutes.

Beat egg. Pour over noodles; mix well. Beat second egg; add spinach, cottage cheese, 1 tablespoon oil, and Parmesan cheese. Mix well.

Layer 1/2 sauce mixture on the bottom of a 9 x 13 baking dish. Add 1/2 noodle mixture. Spread all of the spinach mixture next. Add remaining noodles and finish with sauce layer on top.

Bake at 350 degrees for 1/2 hour. Slice American cheese into thin strips. Put them on top of the casserole and bake for 5 minutes longer or until cheese is melted.

My mom found this recipe in an old Parade's test kitchen in the Sunday paper years ago. I still have the page. Our family makes this recipe a lot. so easy and so good.
