CARROT PUDDING 
4 eggs
2 tbsp. flour
2 tbsp. white sugar (can use less)
2 tbsp. brown sugar
4 tbsp. butter
2 1/2 bunches mashed carrots
1 tsp. baking powder
1 tsp. orange extract
1 tsp. cinnamon

Cover scraped carrots and cook until tender. Cream eggs, sugar, butter together. Add baking powder and flour. Add mashed carrots and orange extract. Put all in a bowl or casserole and sprinkle with cinnamon. Bake 45 minutes at 350 degrees.
