FRENCH WELSH RAREBIT 
10 oz. extra sharp cheddar cheese
1 tsp. paprika
1 egg, slightly beaten
1/2 tsp. cayenne pepper
Pinch black pepper
1 tsp. Worcestershire
1 tsp. dry mustard
1/2 can beer
French bread slices, toasted

Grate cheese into a double boiler. Add cayenne, paprika, mustard. Add beer slowly as cheese melts. DO NOT BOIL. Whip in the egg and Worcestershire to taste.
