CHINESE HOT AND COLD (OR DAN
DAN) NOODLES
 
1 lb. fresh noodles (or 4-5 pkgs. Ramen noodles)
3 tbsp. sesame tahini
1/4 c. warm water
1/4 c. chopped scallion
1 tsp. minced garlic
1 tbsp. soy sauce
2 tsp. red wine vinegar
1 tsp. hot oil (more, if desired)
1 tsp. salt
2 c. clear broth or stock

Cook noodles in boiling water and drain well. Combine remaining ingredients and mix with noodles. Stir well to distribute sauce evenly. Add some of the cooking water, if needed--noodles tend to dry out in refrigerator. Cover and chill at least 2 hours before serving. Serves 4-6.
