MEXICAN PIE 
2 1/2 c. self rising cornmeal
1/2 c. plain flour
2 c. buttermilk
1/2 c. water
1 can cream style corn
1/2 lb. ground beef
1 (8 oz.) pkg. shredded cheddar cheese
1 sm. chopped onion
1 tsp. baking powder
1 egg
1/4 c. oil

Combine cornmeal, flour, baking powder together. Add egg, buttermilk and water; mix well. Brown and drain ground beef. Heat skillet in 350 degree oven with 1/4 cup of oil until hot. Pour 1/2 of cornbread batter into hot skillet. Spread cream style corn, layer ground beef, shredded cheddar cheese and chopped onion in skillet, top with remaining cornbread mixture. Bake for 30 to 35 minutes until soaked and golden brown. 12" skillet serves 10 to 12 people.
