MID - WAY CANDIED YAMS 
Whole sweet potatoes (6 to start)
2 c. granulated sugar
1/4 lb. butter
Cinnamon sugar
Vanilla flavoring
Nutmeg

Slice potatoes and boil until done. Drain off water except about 1 cup. Place potatoes in a glass casserole dish, in rows. Top the layer with 1/3 of the sugar, butter, and cinnamon sugar. Sprinkle with nutmeg and add a dash of flavoring. Place another layer of potatoes and follow the same procedure. Do this until all 3 layers are covered with the ingredients. Bake, covered, in oven at 325 degrees for 30 minutes. Remove and let stand 10 minutes before serving. (As added decoration, try using mini-marshmallows on top.)
