2 c. ground carrots 1 1/2 c. chopped celery 1 1/2 c. peas 1 1/2 c. diced potatoes 1 tbsp. chopped onion 2 tsp. salt 2 eggs 1 c. bread crumbs 2 tbsp. melted butter Butter a baking dish. Layer 1/2 of the bread crumbs and then layer 1/2 of the carrots, celery, peas and potatoes. Add all the onions. Sprinkle with 1/2 of the salt. Place another layer of the vegetables and sprinkle the rest of the salt on top. Beat eggs well and pour over top of vegetables. Cover with remaining buttered crumbs. Bake at 350°F for 1 hour. |
