RED - BEAN PATTIES 
4 c. cooked red or pink beans, drained
4 green onions, sliced thin
1/2 red bell pepper, chopped
1/2 c. chopped fresh parsley
1/4 tsp. cayenne
Tabasco to taste
1/2 tsp. thyme
1/4 tsp. garlic powder
About 1/2 c. apple fiber

In a food processor or blender, combine beans, onions, red pepper, parsley, cayenne, Tabasco, thyme, garlic powder, and 1/4 cup of the apple fiber. Process until smooth.

Place remaining apple fiber in a shallow bowl. Dipping your hands in the apple fiber, shape the bean puree into patties about 2 1/2 inch diameter and 3/4 inch thick.

Spray a skillet with Pam or Baker's Joy and heat. Cook patties for 5 minutes on each side. Serve the patties like burgers on whole bread buns with onions, lettuce, tomatoes, ketchup, barbecue sauce, or mustard. Makes 12 (2 1/2 inch) patties.
