APPLESAUCE CAKE 
2 tbsp. Crisco shortening
2 tbsp. butter
1 c. brown sugar (light or dark)
1 c. white sugar
2 eggs
2 c. chunky applesauce
1 tsp. baking soda
1 tsp. salt
1 tsp. nutmeg
1 tsp. ground cloves
1 tsp. cinnamon
1 c. chopped walnuts
1 c. raisins
1/2 lb. mixed candied fruit (optional to make a fruit cake)
3 c. sifted all-purpose flour

Cream together shortening, butter, brown sugar and white sugar. Add 2 eggs, mix well. Stir in 2 cups applesauce. Add baking soda, salt, nutmeg, ground cloves and cinnamon. Stir in walnuts, raisins, and candied fruit. Add 1 cup of flour at a time and mix well between each.

Pour into greased and floured pans: 2 loaf pans or 1 round pound cake pan or 5 mini loaf pans. Bake in preheated 450 degree oven: 2 loaf pans, 1 to 1 1/2 hours; round cake pan, 1 to 1 1/2 hours, 5 mini loaf pans, 40-45 minutes.

Cake is done when toothpick comes out clean, and the top feels firm to the touch. Immediately upon removing from oven, wrap each cake in a layer of wax paper and a layer of aluminum foil. Let cake stand for at least 24 hours before serving.
