VEAL PARMESAN 
3/4 c. fine dry bread crumbs
1/4 c. freshly grated Parmesan cheese
2 eggs, well beaten
3/4 tsp. salt
1/4 tsp. pepper
1/2 tsp. onion powder
4 veal cutlets
2 tbsp. oil
1 (8 oz.) can tomato sauce
4 slices Mozzarella cheese
Cooked noodles

Mix bread crumbs and Parmesan cheese in bowl. Combine eggs, salt, pepper and onion powder in medium bowl, mixing well. Dip veal into egg mixture. Coat with bread crumb mixture.

Brown over low heat in hot oil in skillet. Place veal in 8x8-inch baking dish. Spoon tomato sauce over cutlets. Top with Mozzarella cheese. Bake at 350 degrees for 15-20 minutes or until cheese is lightly browned. Serve with noodles. Yield: 4 servings.
