THAI CHICKEN WINGS 
2 lbs. chicken wings
2 tbsp. peanut oil
1/3 c. dark soy sauce
2 tbsp. sherry
2 tbsp. honey
1 garlic clove, crushed
1 tsp. finely grated fresh ginger root
Crushed hot red pepper

Remove the tip from the chicken wings. Cut the remainder of each wing into 2 pieces. Heat the oil in a wok and fry the wing pieces on high until browned, about 3 minutes.

Stir together the remainder of ingredients, adding the hot pepper to taste. Add to wok; stir well. Reduce to low heat, cover and simmer until the wings are tender, about 30 minutes. Stir frequently.
