POCATALLA POTATO CASSEROLE 
8 to 10 med. potatoes, cooked in jacket
1 lb. Velveeta cheese, diced
1/2 c. chopped onion
2 slices bread, cut in cubes and toasted
1 stick melted butter
1 sm. jar pimento, chopped
Parsley flakes
Garlic salt
Paprika
3 tbsp. water

Peel and slice potatoes. Saute onion in butter, about 5 minutes on low heat. Add pimento, bread cubes and diced cheese over potatoes. Sprinkle garlic salt, parsley flakes, and paprika over potatoes. Pour melted butter with onion over the preceding. Bake at 350 degrees until cheese melts.
