CHEF NO'S OLD WORLD CHRISTMAS
PIE
 
1/2 lb. ground beef
1/2 lb. ground pork
1 med. onion
1 1/2 tsp. salt
Ground pepper (to taste)
Cooking oil
2 frozen deep dish pie crusts (Mrs. Smith's works great)
1 tsp. poultry seasoning
1 healthy pinch ground clove
1 light pinch cinnamon
1 lg. boiled and mashed potatoes
8 Ritz crackers
1/3 c. water

Preheat oven to 425 degrees.

Peel and finely chop onion. Mix pork, beef and onion together and saute in small amount of oil until lightly browned, breaking up any large pieces. (Do not drain.) Add water to keep meat mixture moist and simmer for 10 minutes. Remove from heat, stir in salt, pepper, clove and cinnamon and cool just long enough to handle.

Place mixture in large bowl and thoroughly blend mashed potato into meat mixture. Crush crackers into fine crumbs and blend into mixture a little at a time until a light, fluffy mixture is obtained. Place mixture into thawed pie shell and use second pie shell to make top crust. Crimp edges, vent crust and brush with beaten egg (if desired). Protect crimped edges with aluminum foil and bake in 425 degree oven for 30-35 minutes or until crust is golden brown.
