CHEESE SAUCE (FOR VEGETABLES) 
1 stick butter
1 sm. pkg. Velveeta
1 sm. container sour cream

In saucepan, over low heat, melt butter. Add Velveeta, in small chunks, stir constantly. When blended add sour cream until smooth. Pour over lightly steamed broccoli or cauliflower. Top with 4 or 5 crumbled Ritz crackers.
