OATMEAL CHOCOLATE CHIP CAKE | |
1 3/4 c. boiling water 1 c. oatmeal, uncooked 1 c. brown sugar 1 c. gran. sugar 1 stick butter 3 eggs 1 3/4 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 tbsp. cocoa 1 pkg. mini semi-sweet chocolate chips 3/4 c. walnuts Pour boiling water over oatmeal. Let stand at room temperature for 10 minutes. Add both sugars, melted butter and eggs, and mix well. Sift together flour, soda, salt and cocoa. Add sugar mixture and flour mixture together and mix well. Add 1/2 package of mini chocolate chips. Pour batter into greased and floured 9 x 13 pan. Sprinkle rest of chocolate chips and nutmeats over batter. Bake at 350 degrees for 30 to 40 minutes, until toothpick comes out clean. Needs no frosting! Mix by hand or with mixer. |
