OATMEAL CHOCOLATE CHIP CAKE | |
1 3/4 c. boiling water 1 c. oatmeal (quick or old-fashioned) 1 c. lightly packed brown sugar 1 c. sugar 2 eggs 1 3/4 c. flour 1 tsp. baking soda 1/2 tsp. salt 1 tbsp. baking cocoa (unsweetened) 12 oz. pkg. semi-sweet chocolate chips 3/4 c. chopped walnuts 1 stick butter Pour boiling water over oatmeal. Let stand 10 minutes. Add brown and white sugars and butter. Stir until butter melts. Add eggs. Mix well. Sift together dry ingredients and add to sugar mixture. Mix well. Add 1/2 the chocolate chips. Pour batter into greased and floured 9 x 13 inch pan. Sprinkle walnuts and remaining chocolate chips on top. Bake at 350 degrees about 40 minutes. Needs no frosting. |
