MANICOTTI SAUCE 
1 (28 oz.) can Italian tomatoes
1 (12 oz.) can tomato paste
1/2 c. chopped onion
2 garlic cloves, minced
1/4 c. olive oil
2 tbsp. butter
2 tbsp. chopped parsley
1/4 tsp. oregano
1/4 tsp. basil
1 tsp. salt
1 tsp. pepper

Saute onion and garlic in combined olive oil and butter for 10 minutes. Stir in tomatoes, tomato paste, herbs, salt, pepper, and 2 cups water. Bring to boil, reduce heat. Cover and simmer for at least 4 hours.
