8-10 oz. Cheddar cheese 1/2 stick butter 3 oz. cream cheese 1 clove garlic 1 1/2 tsp. prepared mustard 1 tbsp. cognac or brandy COATING: 1 sprig parsley 1/2 c. chopped nuts 1 tsp. paprika 1 tsp. freshly ground pepper Food processor or blender may be used. Put garlic in processor bowl and run machine to mince. Add cheese, butter and cream cheese in chunks, processing first with on-offs to break up, then run the machine to "grate" and finally to cream. Add mustard and brandy, processing smooth. Pack into crock, or shape into round and roll in coating. |
