WHOLE WHEAT MUFFINS 
2 c. whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
1/4 c. oil
1/4 - 1/2 c. honey or molasses
1 1/2 c. milk

Combine dry ingredients. Combine wet ingredients. Fold wet and dry ingredients together quickly, just until flour is moistened. Spoon into greased muffin tins (12). Bake at 400 degrees for about 20 minutes.

VARIATIONS:

1. Substitute cornmeal for flour.

2. Substitute 1 cup bran for 1 cup flour.

3. Add 1/2 cup dried fruit.

4. Add 1/2 cup chopped nuts or sunflower seeds or roasted sesame seeds.
