SPINACH CASSEROLE 
1 lb. macaroni of your choice
1 lb. bulk hot turkey sausage
2 (10 oz.) pkgs. frozen chopped spinach
1 lb. pkg. Mozzarella cheese, grated or cut in cubes
1 (24 oz.) jar spaghetti sauce
1 lg. onion
1 lg. pepper

Cook macaroni by the directions on the box. Cook spinach and drain; squeeze off excess liquid. Mix macaroni, spinach, and Mozzarella into a 9 x 13 inch lightly greased pan. Saute sausage, onion, and pepper until cooked, add spaghetti sauce and simmer about 10 minutes adding any other spices (basil, garlic salt, oregano). Spoon over macaroni evenly to cover. Bake at 325 degrees for 35-45 minutes. Serve with salad and crusty French bread. Serves 6.
