TOFU EGG ROLLS 
4-5 large carrots, shredded
1-1/2 large stalks and heads broccoli
1 lb. firm tofu
2 tbsp. sugar - to taste
Tamari - to taste
Egg roll wraps

Shred or chop the vegetables fine. Stir fry each in oil. Stir fry tofu, mash and crumble while frying. Mix all with sugar and tamari. Place 3 tablespoons filling in each wrap and fold according to package. Fry in wok or skillet (375 degrees) in 2-3 inches of oil until golden brown. Great with sweet and sour sauce.
