1/2 med. green cabbage 2 lg. whole carrots, peeled & scraped 1 can pineapple chunks, drained 2 tbsp. sugar (more or to taste) 2 tbsp. vinegar 1/2 c. mayonnaise (more if needed) Shred cabbage very fine. Shred carrots. Mix together in large bowl. Sprinkle the sugar over mixture. Sprinkle vinegar over mixture. Mix and let set room temperature for 1/2 hour. Cut pineapple into smaller chunks, add to cabbage mixture, mix in mayonnaise, mixing well. Chill. |
