FOOLPROOF RIB ROAST OF BEEF 
1 standing rib roast of beef, any number of pounds
Salt & pepper

Plan your day so you will not need your oven for anything else. You are going to roast the beef in the A.M. for 1 hour. You must leave it in the oven all day and the oven door must not be opened.

Step 1: Let the roast stand at room temperature for 1 hour before placing it in oven. Preheat oven to 375 degrees. Rub roast with salt and pepper, place on rack in a shallow pan, rib side down.

Roast for 1 hour after the hour turn oven off. Do not open the door. Then layer the roast the longer it continue to cook after oven off.

Step 2: 30-40 minutes before serving time again turn oven to 375°F. Roast additional 30-40 minutes. This is fool-proof for rare roast beef. If you prefer medium or well done, add 15-20 minutes to step 2. Do not open oven door from time roast in oven until you are ready to serve the roast.

Suggestion: Remove roast 15 minutes before dinner is served then the juices of roast will be absorbed. Check roast temperature with oven thermometer and it should read 150°F for medium rare/medium when done.

A great recipe. On Step 2 I added a temperature gauge (the kind where you have a metal pin to stick in the meat and a cable out to a digital gauge), and let it run to 140F. I removed the roast as suggested, but wrapped it immediately in foil to keep it warm & moist). It came out perfect, pink in the middle.
